Defining Strong Spirits
We may hear the term "spirits" often when referring to alcohol, but what does what mean exactly? Basically, spirits (also called liquor) are the heftiest member of the alcohol family. Yeast can only ferment so much before alcohol levels become toxic, so it has to be distilled to get a higher alcohol concentration. Spirits are the distilled products that have a higher measure of alcohol by volume. This can range from around 20% to as high as 80%, but typically fall somewhere closer to the middle.
